Our goal is to produce
the best wine possible with the soil, climate and people we have
to hand. At the beginning in 1996, we had very young vines, little
experience but lots of enthusiasm. Over the years all this has
evolved and the wines have improved steadily in quality.
The wine-making is in the hands of three people, the owner, a
seasonal wine-maker and an oenologist from the Laboratory
of Oenology in Soussac. With this team and good organisation we
always manage to get the best from our grapes.

All
our wines are
"Appellation d’Origine Contrôlée" (AOC).
The wines are subject to a blind tasting
every year in order to obtain a certificate which guarantees
the authenticity and quality.
Our red and white wines are sold under
the appellation Sainte
Foy Bordeaux and
the Rosé under the Bordeaux
appellation. |
There are five types of wines under the Carbonneau
label which differ in name and packaging. The different characteristics
of these wines are as follows:

Cuvée
Classique
85% merlot,
15% Cabernet sauvignon, bottled after 1 year in stainless
steel vats, smooth and fruity – an
ideal wine for lighter meals.
Total production is around
22,000 bottles

Cuvée
Fûts de Chêne "Séquoïa"
57% Merlot, 27% Cabernet Sauvignon, 16% Cabernet Franc, aged 11 months
in 2 to 5 year old barrels (75% American Oak and 25% French
Oak). This is a more complex wine and longer on the palette.
The American oak brings hints of vanilla which soften the
tannins and allows for a very drinkable wine. This wine is
ideal as an accompaniment to meat and game.

Cuvée
Réserve "La Verrière"
Mono varietal wine, 2003 et 2005 – 100%
Merlot, 2004 and 2006 – 100% Cabernet Sauvignon.
There is only a small quantity produced and it is our premium
wine. Made with the very best of our grapes it is aged
in 100% new French oak barrels and this gives rise to exceptional
fruit concentration and tannins.

Can be cellared up to 15 years |

Cuvée
"Lulu", rosé de
Carbonneau
the Rosé is made from Merlot (2/3) and
Cabernet Franc (1/3). It is harvested a week before the red wines and
maintains its freshness due to fermentation at low temperatures. Its
nose is reminiscent of strawberries.
The total production is 7,000
bottles and it is
best drunk in the year following its bottling. |

Cuvée
"Margot", sauvignon blanc
100% sauvignon blanc. The grapes were hand picked and pressed full bunch in a pneumatic press. Followed by low temperature fermentation, this wine has preserved all the typical aromas of sauvignon blanc.
The total production is 1,500
